Pesto |

There’s nothing like growing your own basil and making fresh pesto in the summer months. When we needed to cut dairy out of our diet, I was determined to create a delicious pesto recipe without the Parmesan. I believe I did it with this recipe. Enjoy it over zucchini noodles or on top of your favorite vegetables.

PREP TIME: 10 minutes
YIELD: About 1 Cup


2 cups tightly packed basil
½ cup pine nuts or walnuts
1-2 cloves garlic
½ cup olive oil
¼ – ½ tsp. sea salt


1.  Place all ingredients into a food processer and blend until smooth.
2.  Scrape down the sides and blend again.
3.  Serve on top of zucchini pasta, vegetables, as a dip…
