When my family and I were searching for more ways to get cilantro into our diet, sofrito became a favorite. Normally used as a staple for Latin American dishes, we love it just as is. You can add it to a salad, top it with some olive oil and salt or just enjoy it raw.
SOFRITO
RECIPE INFO:
PREP TIME: 10 minutes
YIELD: 4 servings
INGREDIENTS:
1 large onion finely chopped
1 bunch cilantro finely chopped
2 large tomatoes finely chopped
2 large peppers (I like to use green and yellow)
Olive oil & sea salt
METHOD:
1. Finely chop the onion, cilantro, tomatoes and peppers.
2. Add to a bowl and lightly drizzle with olive oil and sea salt if desired.
3. Add to a salad or simply serve and enjoy!
